Who doesn’t love pancakes? They’re basically a healthier version of cake that you can eat for breakfast. Admittedly, they’re not entirely that healthy. Which is why I was stoked to come across this version in a restaurant in Doha, Qatar.

A common problem I have with some pancakes is that they can come out dense, heavy and overfilling. They can be overly chewy or too sweet with syrup and too bland without.

I did run into any of these problems with these pancakes.

The pancakes alone were light, airy, perfectly thick, the right amount of chewy and carried some moisture. Between the pancakes sat a layer of whipped creme that tasted and felt freshly made and incredibly airy. Despite the warmth of the pancakes, the whipped creme maintained its constitution.

On top of the pancakes was a small collection of fresh-looking fruits, well preserved and that tasted like they were grown in the correct season.

The real kicker were the granola. Now, I’m not usually a fan of oats. They’re usually bland, feel like cardboard and just generally unpleasant. The granola, though was not bland or cardboard textured, which makes me wonder why anyone ever adds oats to pancakes they can add granola to… Isn’t granola made of oats? Maybe I’m just not cut out to be a chef. Or maybe oats just don’t belong on pancakes.

One thing is for certain, this granola did wonders for this combination of ingredients. They were light, crunchy and added a necessary combination to the sweet (pancakes, syrup, creme) and slightly sour (strawberries, blueberries) ingredients that give the dish the perfect balance.

Despite the quantity of food on this dish, because of the balance achieved, I was able to finish the food on the plate just in time to get full. I had this dish with a a cup of iced latte that had 2 added teaspoons of syrup that was also phenomenal.

The pancake syrup came separately in a little bowl as you can see in the above picture, and so I did what any self respecting individual faced with this view and these options would do. I filmed the process of adding syrup to the pancakes. It just felt right.

So that’s it. Add granola to your pancakes, this combination with the fruits and whipped creme is unbeatable on pancakes. Visit Qatar, go to Volume Cafe and order these pancakes. You won’t regret it.
